The coffees heare are all Full City/American Roast. Roasted to a brown color, the beans are dry and show no oil on their surface. Of the various roasts I do, this is the lightest.

Ripe cherries are hand-picked and floated to sort out underripes and defects, then left to oxidize in the hopper for 12 hours before depulping. The pulped coffee ferments in tanks for 80�100 hours, developing the lot's signature sweetness and fruit character, then is washed clean and moved to covered raised beds to dry slowly over 8�20 days. ECUADOR SIDRA Finca Terrazas del Pisque

Sidra is a variety native to Ecuador, likely a Bourbon-Typica cross, though there's some evidence it may be a hybrid developed by Nestl� (nobody seems to be sure). It's a pretty new variety, at least in the specialty market, but we are starting to see more of it as it produces a great coffee, very dense and interesting, especially for a washed coffee like this one. From the Pichincha region, 2100 meters.
