This tea comes from eastern Nepal and the Himalayas are within view of the gardens. The leaves are withered indoors, and then are shaken in basket trays by hand to bruise the leaves. This begins the oxidation as the cell walls break down at the leaves' edges. There are alternate periods of shaking and resting. Oxidation is halted by using heat to dry the leaves, and then they are hand-rolled, which is quite extraordinary for an oolong. Oxidation for this oolong is between 35-45%. Wood and coal are used for firing. Then the leaves are dried (by a tumbler-like machine). This is followed by drying, sorting, packing. It is reminiscent of Taiwanese Oolongs.
