Chai is, traditionally, a blend of black tea and cardamon, cinnamon, and ginger added to a generous portion of sweetened milk originating in western India. However, from one region to the next, one finds one ingredient added, another left out, creating the rich pageant of flavors for which India is so famous. Here are a few of the ones we found the best.
Use a teaspoon of chai for each cup, and "one for the pot," in a very fine mesh infuser. Both the tea and the spice are cut very fine and will seep through a normal mesh ball. After three to five minutes, depending on how strong you like your tea, fill each cup with 2/3 tea and 1/3 steamed or heated milk. A dollop of honey makes it deliciously sweet!
